It seems like a month since I wrote a results article and this one is no fun to put together. I missed on ALL of my recommendations for week 15 – Catcher edition, dropping my YTD to 57-38-3. I definitely went out on a limb and I hope you didn’t also and started the likes of Ruiz and Norris as your backstop.  Lucroy had a great couple of weeks, Mauer was just so-so, and Weiter’s last three days made up for the prior eight. Even my two-start pitcher ended up with only 1 start since week 15 began on 7/8, and it wasn’t good. Here are the results, followed by a recipe for Watermelon & Shrimp Pico de Gallo.

Watermelon & Shrimp Pico de Gallo

Sweet and juicy watermelon, warm shrimp and spicy jalapeno flavor this Pico de Gallo recipe that can be served as an appetizer or with a main course.

 

INGREDIENTS

2 tablespoons canola or vegetable oil
3 tablespoons minced shallots
1 tablespoon minced jalapeño
1 tablespoon minced garlic
1 teaspoon soy sauce
1 teaspoon ground cumin
3 limes, juiced
2 cups minced seedless watermelon
2 cups chopped, cooked, cooled, peeled and deveined shrimp
1/2 cup chopped fresh parsley
1/2cup diced roasted red peppers
smoked sea salt, to taste
ground black pepper, to taste

 

PREPARATION

Heat the oil in a heavy non-stick skillet over medium-high heat.
Saute the shallots, jalapeno and garlic until golden and toasted around the edges.
Remove from heat and add soy sauce and cumin. Let cool.
Scrape the cooled ingredients into a bowl and toss with lime juice, watermelon, shrimp, parsley and roasted red pepper.
Season with sea salt & pepper to taste, then serve with chips and margaritas, or on top of grilled salmon.
