National Football League

It’s a 5 team race as we head into November.  The patriots are who we thought they were winning games that they should.  Their biggest question right now is the defense. Can they allow less points than they score?  The Steelers always seem to play down to their opponent.  They broke that trend last week with the thumping of the bungles at home where they allowed 19 total yards in the second half, and then won a gritty road game against a not so great Lions team. Are the E…A…G…L…E…S… we can spell eagles, for real? We have our doubts, but they keep winning. Lets see what happens. Their remaining 1/2 season schedule is harder than their first, but not by much.   The Chiefs and Seahawks seem very vulnerable. It’s anyone’s guess right now who will emerge as the undisputed top team, if that will even happen and if anyone is still watching.

Turkey Day and the NFL

For millions of Americans, from generation to generation, Thanksgiving Day and NFL football are inextricably linked.

On Thanksgiving Day in 1925, a crowd of 36,000 – then the largest in pro football history – watched the Chicago Bears play the Chicago Cardinals at Wrigley Field.

In Detroit, the relationship between the Lions and Thanksgiving football dates back to 1934 when owner G.A. RICHARDS scheduled a holiday contest between the first-year Lions and the defending world champion Chicago Bears. The game was the first NFL game nationally broadcast, with NBC radio on the dial.

Since 1966, the Cowboys have been a Thanksgiving fixture, having hosted the annual contest for 47 of the last 49 years. In 1975 and 1977, the St. Louis Cardinals played host to the game in place of Dallas. In 1978, the game returned to Dallas for good.

From touch football games with friends to watching NFL games with relatives after a holiday feast, these football moments and memories are interwoven with the holiday season.

The NFL is making history on Thanksgiving this season. After the Detroit Lions and Dallas Cowboyshost their annual Turkey Day contests and in between your tryptophan trip and sweet potato plunge, one team will host a Thanksgiving Day game for the first time in its franchise history.

The Washington Redskins will host their NFC East rivals New York Giants in the third game on November 23. The ‘Skins are no stranger to Thanksgiving games — this will be their 10th appearance — but they often played at Texas Stadium or AT&T Stadium.

Now, Thanksgiving will be good for four things: football, food, family and — in the case of Odell Beckham Jr. and Josh Norman– friendly fireworks.

Here’s a quick preview of this year’s Thanksgiving slate:

Minnesota Vikings at Detroit Lions, 12:30 p.m. ET, FOX

The first divisional game of the day, this will be the Vikings and Lions‘ second straight Thanksgiving Day tussle and their second meeting of the 2017 season; they first face off in Minneapolis in Week 4. Detroit swept the two-game set last year, best remembered for Golden Tate‘s game-winning overtime spin-and-score. The clubs have only split their season series twice in the past nine seasons. A Sam Bradford-Matthew Staffordduel might not be the flashiest way to start your holiday Thursday, but it should make some high-stakes display of passing efficiency.

Los Angeles Chargers at Dallas Cowboys, 4:30 p.m. ET, CBS

If this matchup appears on face value rather unusual, it is. The transplanted Chargers haven’t played on Thanksgiving since the merger in 1970; the Cowboys haven’t played an AFC team on Turkey Day since 2013 when they beat the Raiders, 31-24; and this will be just the 11th meeting between the two teams. Philip Rivers vs. Dak PrescottMelvin Gordon vs. Ezekiel ElliottKeenan Allen vs. Dez Bryant. Prepare for points. (This game will also mark the return of former Cowboys QB and recently hired CBS color man Tony Romo to Jerrahworld. Tune in for some verbal gymnastics.)

New York Giants at Washington Redskins, 8:30 p.m. ET, NBC

The night’s marquee matchup will rehash one of the league’s oldest rivarlies and dive into some intradivisional beef. Last year, the Redskins‘ playoff bid was thwarted by Big Blue at FedEx Field in Week 17, when Kirk Cousins threw a late pick to Dominique Rodgers-Cromartie. Late in the season and in prime time, Cousins will need to make a statement to overcome last year’s demons and prove he’s Washington’s QB of the future. And then there’s OBJ vs. Norman, Episode IV: A New Hope. With more Giants receiving weapons to account for this time around, we might not see as many fireworks from Norman, but you never know.

Heisman Watch

Louisville’s Lamar Jackson returns as the Heisman Trophy winner, and will to try to become the second two-time winner in the award’s history alongside Ohio State’s Archie Griffin. but he has competition at quarterback from USC’s Sam Darnold and Oklahoma’s Baker Mayfield, among others, and at running back from Penn State’s Saquon Barkley and LSU’s Derrius Guice.  Given that the Heisman winner has been either been a quarterback or running back for the last 20 years, it’s a good bet the winner is on one of those.

The Playoffs

— Races will consist of three stages, with championship implications in each stage. The green flag begins the race, and therefore is Stage 1. Its length is approximately 25-30 percent of the event’s total length and is different for each race, dependent on track size and race length.

— At the conclusion of Stage 1 and Stage 2, there is a caution period for drivers to come down pit road if they choose. Green-flag restarts will begin the next segment.

— The top-10 finishers in each stage will be awarded additional championship points.

— The Chase will now be referred to as the playoffs.

— The winner of the first two stages of each race will receive one playoff point, and the race winner will receive five playoff points. Each playoff point will be added to a driver’s reset total following the 26th race, if that competitor makes the playoffs.

— Points for both stage winners and race winners will transfer into the postseason and an official regular-season champion will be crowned, and rewarded with 15 playoff points to the driver’s playoff reset of 2,000. The stage format also gives fans a pair of natural breaks in the action.

— All playoff points will carry through to the end of the third round of the postseason (Round of 8), with the Championship 4 racing straight-up at Homestead-Miami Speedway for the title.

Nitto ATP Finals

THE O2, LONDON | NOV 12-19

The Nitto ATP Finals is the year-end climax to the men’s professional tennis season, featuring only the world’s best eight qualified singles players and doubles teams as they battle it out for the last title of the season. Players compete for Emirates ATP Rankings points throughout the season in a bid to earn one of the eight coveted berths. Played using a round-robin format at The O2 in London, each participant plays three matches as they compete for a berth in the knockout semi-finals and beyond. An undefeated champion earns 1,500 Emirates ATP Rankings points. Total prize money offered is USD 8 million.

The Nitto ATP Finals has a round-robin format, with eight players/teams divided into two groups of four. The eight seeds are determined by the Emirates ATP Rankings and Emirates ATP Doubles Team Rankings on the Monday after the last ATP World Tour tournament of the calendar year. All singles matches are the best of three tie-break sets, including the final. All doubles matches are two sets (no ad) and a Match Tie-break.

The top seeded players/team is placed in Group A and the second seeded player/team is placed in Group B. Players/teams seeded 3 and 4, 5 and 6, 7 and 8, are then drawn in pairs with the first drawn placed in Group A. Each player/team plays the three other players/teams in his group. The winner of each group (best overall record) is placed in separate semi-final brackets, with the top player/team in Group A playing the runner-up in Group B, and vice versa. If two or more players/teams are tied after the round robin matches, the ties are broken by the Tie-Break Procedure.

The Finals Club, launched by the ATP in 2015, celebrates past champions and the heritage of the season-ending tournament since its inception in 1970, with the group names changing each year to reflect a specific decade.

In 2016 this was highlighted by the renaming of Groups A and B for both the singles and doubles in honour of players that made an indelible mark on the tournament in the 1980s.

In singles:
- Group A was named in honour of John McEnroe, the 1978, 1983-84 winner.
- Group B was named in honour of Ivan Lendl, who won five titles from nine straight finals (1980-1988).

In doubles:
- Group A was named in honour of Fleming/McEnroe, who won seven straight titles (1978-84).
- Group B was named in honour of Edberg/Jarryd, who won the 1985-86 titles.
The 2017 group names will be announced later in the year.

The final standings of each group is determined by the first of the following methods that apply:
a) Greatest number of wins;
b) Greatest number of matches played;
Comment: 2-1 won-loss record beats a 2-0 won-loss record; a 1-2 record beats a 1-0 record.
c) Head-to-head results if only two (2) players are tied,

NYC Marathon

this year’s big run in the Big Apple to kick off on Sunday morning, November 5, 2017 beginning at 9AM with the starting line at the city’s famous Verrazono-Narrows Bridge in Staten Island.

For complete TV coverage tune in to local ABC television on Channel 7 in New York City. and nationwide on ESPN and ESPN2.

Celebrities running this year? As usual, there will be plenty of star wattage at the 2017 NYC marathon, including funnyman and avid runner, Kevin Hart; supermodel and former Victoria’s Secret Angel, Karlie Kloss; singer and Bronx-born native Prince Royce; along with sports commentator and former NFL running back, Tiki Barber, who has been running the New York marathon since 2014.

All about the New York City Marathon

What began in Central Park with a 127 runners in 1970 has grown to become an international event, which includes almost 50,000 runners from around the world in one of the largest and most famous running competitions.

Where else? In New York City, where an estimated 2 million spectators pack the sidewalks each year to cheer on a friend, a relative, or famous celebrity in a marathon truly energized by a carnival party atmosphere, stretching from Staten Island to midtown Manhattan

New York Marathon official route

The New York City Marathon starts on the Staten Island side of the Verrazano Narrows Bridge, then proceeds through Brooklyn and Queens.

Crossing into Manhattan, via the Queensborough Bridge, the race next makes its way up to the Bronx and then south again to Manhattan … where the finish line awaits in Central Park

New York Marathon Map
New York City Marathon Map

In Manhattan, First Avenue and 59th Street traditionally provides the most dramatic views as runners spill down the ramp of the Queensborough Bridge (at the 16-mile mark) for a sharp turn on First Avenue to speed their way uptown. Otherwise, the best spectator viewing – and most elbow room – can be found on First Avenue between 65th and 96th Streets.

In Brooklyn, any spot along Fourth Avenue, the longest NYC Marathon stretch, comes highly recommended. In Queens, the best spots lie along 51st Street and 44th Drive from Vernon to Crescent Street. Meanwhile, up north in the Bronx, try 138th Street from Alexander Avenue to Third Avenue.

Around the Web, check out more detailed course descriptions with related maps, pictures, stories, history and trivia, stats and running times plus lots more on the world’s biggest block party that is the New York City Marathon.

Grey Cup

Sunday, November 26, 2017 6pm ET / 3pm PT

“We’re bringing Canada’s cup to Canada’s capital in the year we all celebrate Canada’s 150th birthday,” said Jeffrey L. Orridge, Commissioner of the Canadian Football League.

“It’s going to be very special for our fans and our league and, most of all, our country.”

The annual championship game of the CFL, the Grey Cup presented by Shaw will be played at TD Place Stadium at Lansdowne Park on Sunday, November 26, 2017.

“We are thrilled to host the 2017 Grey Cup and cap off a year of Canada 150 celebrations in the nation’s capital,” said Jeff Hunt, President of OSEG, the Ottawa REDBLACKS’ parent company.

“I’d like to thank the CFL Board of Governors and Commissioner Orridge for giving us this amazing opportunity and I promise CFL fans across the country that we’ll put on a great show and welcome them to Ottawa with open arms.”

Canada’s largest single-day sporting event, the Grey Cup presented by Shaw is also one of the country’s biggest celebrations and most cherished traditions.

The game attracts a massive television audience: usually 1 out of every 3 Canadians watches at least part of the game. And it is preceded by a multiday festival hosted by the local team. Canadians from every corner of the country travel to the host city for a massive celebration.

Together, the game and festival represent a significant opportunity. The total economic activity generated by the 100th Grey Cup in Toronto in 2012 was more than $133 million throughout the province of Ontario, with $94.7 million occurring in the city of Toronto according to the Canadian Sport Tourism Alliance. Other Grey Cups have reported economic activity in the range of $100 million.

“The Grey Cup game and festival are iconic national events that provide a tremendous boost to the local economy, but more than that, they bring our nation together,” said Ottawa Mayor Jim Watson.

“Whether you watch the game on television or online, or experience the thrill in person, you’re experiencing the latest chapter in a Canadian cultural event that has brought Canadians from coast to coast to coast together for over 100 years. Our community is delighted that the Grey Cup is coming back to Ottawa as a crown jewel of our 2017 celebrations.”

Easy Turkey Gravy

Making gravy from your pan drippings is easy. You can make it with the drippings or use low sodium chicken broth while your turkey is resting. Don’t even think about using gravy from a jar.

1/2 cup butter
1/2 cup all-purpose flour
3 tablespoons all-purpose flour
1/2 teaspoon black pepper
4 cups pan drippings

Drain the pan drippings for the roasted turkey through a fine strainer.
Let sit and then remove any fat from the top of the drippings.
Add in chicken broth or water to make 4 cups if necessary.
In a medium saucepan, melt margarine or butter.
Add in lots of black pepper.
Add in 1/2 cup flour plus 3 tablespoons; constantly whisk for about 3 minutes over low heat. Slowly add in the 4 cups turkey broth/drippings; whisk constantly over medium-low heat until bubbly and thickened (about 3 minutes).
Use right away or keep warm over lowest heat setting, whisk again before serving.

Mashed Potatoes

The greatest thing about this recipe for mashed potatoes is that you can make them ahead of time and cook them while the turkey is resting.

3 lbs potatoes (about 4 large)
1/2 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine
2 (3 ounce) packages cream cheese, softened
2/3 cup sour cream
1/4 cup milk
3/4 teaspoon salt
1 tablespoon butter or 1 tablespoon margarine, melted
1/2 teaspoon paprika

Place potatoes in a saucepan; add water to cover and 1/2 teaspoon salt.
Bring to a boil; cover, reduce heat to medium and simmer for 25 minutes or until potatoes are tender. Drain.
Peel potatoes; place in a large mixing bowl, and mash with a potato masher.
Add 2 tablespoons butter, cream cheese, sour cream, milk and 3/4 teaspoon salt.
Mix until all ingredients are blended.
Spoon mixture into a lightly greased 12x8x2-inch baking dish. Brush top of mixture with melted butter; sprinkle with paprika. Bake immediately, or cover and refrigerate*.
Bake at 350F, uncovered for 30 minutes or until hot.
*= If refrigerated, let stand at room temperature for 30 minutes before baking.

Sweet Potato Casserole

This is my take on a classic sweet potato casserole. To me, you must top them with marshmallows, but they are optional.

3 cups mashed sweet potatoes
2 eggs, lightly beaten
1/2 cup sugar
1/2 teaspoon salt
1/4 cup melted butter
1/4 cup cream
1 1/2 teaspoons vanilla extract

1/2 cup brown sugar
1/3 cup flour
1/2 cup chopped walnuts
1/2 cup chopped pecans
3 tablespoons melted butter
1 cup mini marshmallows

Mix all of the casserole ingredients together until well blended.
Spread into a buttered casserole dish. Mix topping ingredients (except marshmallows) together and sprinkle over the casserole. Bake uncovered in a 350 degree oven for 35 minutes. Remove from oven. To top with marshmallows, place them on the casserole and bake for an addition 5-7 minutes or until marshmallows have melted.

Cranberry-Pineapple Sauce

This recipe makes close to 6 cups, plan ahead the sauce needs to chill for 24 hours before using.

1 (20 ounce) cans crushed pineapple in juice
2 (12 ounce) packages cranberries (fresh or frozen, preferably fresh)
1 1/4 cups sugar (can use more)
1 tablespoon fresh lemon juice
1/4 teaspoon cloves

Drain the pineapple thoroughly in a fine sieve set over a large measuring cup (push the pineapple against the sieve to drain out any extra juice).
Add enough water to the measuring cup (with the juice in it) to make 2 cups liquid.
Place the liquid in a saucepan. Add in cranberries and sugar.
Stir over medium heat until sugar dissolves and the mixture comes to a boil. Continue to boil until most of the berries pop and the mixture is thick, stirring occasionally (about 10 minutes) remove from heat. Add in drained pineapple, walnuts, lemon juice and cloves; mix until well combined. Transfer to a bowl and cool to room temperature.
Cover and refrigerate for 24 hours.

Green Bean Casserole

This is the classic green bean casserole you have had at many thanksgiving dinners throughout the years. The recipe has not changed and can’t be easier.

1/8 teaspoon black pepper
2 (14 1/2 ounce) cans cut green beans, drained
1 1/3 cups French-fried onions (French’s)

Combine soup, milk and pepper in a 1 1/2 qt baking dish; stir until blended.
Stir in beans and 2/3 cup fried onions.Bake at 350°F for 30 minutes or until hot. Stir.
Sprinkle with remaining 2/3 cup fried onions.Bake 5 more minutes or until onions are golden.

Smoking the Bird

For generations people have been dropping turkeys into the oven and roasting for hours. They use stuffings and little pop up timers. Guess what? You can make a great turkey this way, but wouldn’t it be great to go one step further? Smoked turkey is more flavorful and tender than one roasted in the oven. Breaking away from tradition can be hard, but let the people over all walk you through the process.

The Basics:

Here’s what you are going to do. You are going to smoke your turkey to an internal temperature of 165 degrees F. This means that the coldest part of the turkey is 165 degrees F. This isn’t a suggestion. Test in at least two places (or more) and remember that turkey bones heat faster so keep the thermometer away from bone. Also, dark meat should be cooked to a higher temperature so worry about the breast, but make sure to check the thighs as well.

Deep Fried Turkey

How To Deep Fry a Turkey

As the popularity of Cajun Deep Fried Turkey has continued to grow, a whole industry has sprung up to support it. The problem is that most people face a big problem trying to do this on their stove. Namely, it makes a terrible mess and it’s dangerous to do in an enclosed space. The answer is to take it outdoors. But be warned, this can be a expensive operation, but well worth it. For those of you who don’t know what a deep fried turkey is like, let me give you the basics of the process.

How to Deep Fry a Turkey:

Step One: Get a turkey, a very large cooking pot, and some cooking oil. vegetable oil can be used, but it’s better to use peanut oil. Peanut oil is very expensive and several gallons are going to be needed.

Step Two: Prepare the turkey. It needs to be defrosted and washed. Make sure there are no pop up tender timer devices or anything left inside. And, most importantly it must be completely dry. I mean really, really dry. You know what happens when you put water in boiling oil, don’t you. You will also need to truss the turkey, meaning you need to secure the legs, neck flap, wings and tail to the body of the turkey.

Step Three: To determine the perfect amount of oil you are going to be using, place the turkey in the pot and add water until the turkey is completely covered plus two inches. With the turkey and the water there should still be several inches of room between the oil and the top of the pot. If it’s a close call, then you need either a bigger pot or a smaller turkey. Remove the turkey and measure the water. This is the amount of oil that will be needed.

Step Four: Dry and season the turkey. Various recipes will call for seasoning rubs or injection mixtures. You’ll find out more on this in the coming posts.

Step Five: Make sure that your frying pot is completely dry. Water left behind can cause some serious problems once the oil is added and starts heating up.

Step Six: Add the oil to the pot and bring it to a temperature of about 375 degrees. You should really get a good thermometer so you can get the temperatures right.

Step Seven: This is where it gets tricky. The turkey needs to be room temperature and dry. Turn off the burner when you put the turkey in. You are going to lower the turkey into the pot of very hot oil. The oil is going to splatter. You need some very good cooking gloves and a way to put the turkey in the oil while you are a safe distance. This is the reason why it’s really not that good of an idea to do it on your stove top. There are now devices to help you like Deep Fried Turkey Lifter for $39.95 that give you a good hold on the turkey. Now I have heard of people using a wire basket on the turkey and a wooden board to do this. A bit of inventing and I’m sure you’ll find a way. Anyway, slowly lower the turkey into the oil.

A good method here is dunking. When you lower the turkey into the oil it will boil up. This is why you want the burner off when you do it. People have been burned by hot oil hitting the burner. You might not need to do more than a single dunk but you should be prepared to raise the bird out of the oil it it starts boiling up. You can greatly reduce the mess and risk of personal injury by lifting the bird up as the oil boils around it. A couple of dunks and the turkey should be nicely settled in.

Step Eight: Once the bird is safely resting in the oil, turn the burner back on to get to a temperature of 350 degrees F. At this point you can go take a breather. But don’t wander too far because that turkey will be done soon. A deep fried turkey cooks at a rate of about 3 to 3 1/2 minutes per pound. A ten pound turkey should take 30-35 minutes. An instant read thermometer can help you test for doneness, but of course you will need to lift the turkey out to test it.

Step Nine: Remove the turkey from the oil when it’s done. Do this slowly and after you have turned off the burner. Let the turkey drain a little bit and you’re set to go.

Step Ten: Carve and enjoy. If you have never had a turkey cooked this way then you have not finished your life requirements. Do this and you may never put a turkey in the oven again. Despite what you might think this turkey is not oily or greasy. It’s crisp, juicy and delicious.

Of course I know that if you put your mind to it you can come up with a good cooker arrangement. But there are a couple of things this cooker needs: a good stock pot, a controllable heat source and a way to safely get the turkey in the oil and out again.

whole turkey, completely thawed
seasoned rub
peanut oil

1. Get a huge pot, like a stock pot. Put the turkey (completely thawed) in the pot, add water to completely surround the turkey. Look at how much water you added; that’s how much oil you will need. Pour out the water and dry off the turkey.
2. Put a seasoned rub on the turkey. You don’t have to, but it makes the skin delicious.
3. Fill the pot with as much oil as you need..The more the better. This is where it gets expensive, because you need at least a couple gallons of oil. The better quality oils (like peanut oil) will get hotter, and work better, but you can use a cheaper oil. Now, get the oil as hot as possible, and as close to 400 as possible without excessive smoking.
4. Turn off the burner (this is a precaution to prevent spatters from hitting an open flame). Add the turkey. You can use a 2 by 4 piece of wood (thru the wrapped legs) to lower the turkey into the oil. WARNING: the oil really splatters out at this point, so STAY back. This is MESSY! Once the spattering has stopped, turn the burner back on.
5. After you add the turkey, the oil temp. will drop rapidly. That’s why you want it as hot as possible to begin with. Hopefully, it will remain around 350 degrees, so it sears the skin, and the meat does NOT get greasy.
6. Cook for about 3 min per pound, + 5 minutes. It the turkey is over 18 lbs, you might want to go 3 min per pound +10 or 15 minutes.
Turkey done this way is very tender and moist, and amazingly not greasy…

Six Steps to Carving the Perfect Turkey

Thanksgiving Info

How to Pick a Turkey

The rule of thumb when buying a Thanksgiving turkey is to estimate one pound of meat per person. If you have a little extra time and money to spend, consider getting your turkey from a nearby farm. In addition to supporting the local economy, you get the freshest meat possible and won’t have to worry about defrosting. Fresh turkeys should remain refrigerated until cooked. If you buy a frozen bird, follow the tips in step two.

How to Defrost Your Turkey

You can defrost a turkey in the refrigerator or in cold water. In the fridge, you need approximately 24 hours for every 4-5 pounds of turkey. Cold water thawing takes only 30 minutes per pound of meat. You must change the water every 30 minutes, however, and refrigerate or cook your bird immediately after thawing.

Prepping Your Bird

To add extra flavor and tenderize your turkey, consider taking the time to marinate or brine it before roasting. The jury’s still out on which method creates a tastier bird, so try one this year and the other next November and let your family decide!

To Marinate: Use a fork to make holes over the whole turkey. Put the bird in a large, sturdy plastic bag, add the marinade (homemade or purchased), close the bag, and let your bird marinate overnight in the refrigerator. Be sure to discard leftover marinade before cooking the turkey.

To Brine: Prepare the brining solution, mixing 2 cups of table salt with 2 gallons of cold water in a large, clean container. You can add dried herbs to the brine, and some chefs also use brown sugar, a few cloves of garlic, or even dried red chili peppers. Submerge the turkey in the brining solution and refrigerate for 6-8 hours. Before cooking, thoroughly wash the turkey, removing all remnants of the brine.

Stuffing – Let Your Creativity Reign

While you can buy stuffing mixes, the homemade alternative is much tastier, and not as hard to prepare as you might think. There are a myriad of stuffing combinations, including a few creative twists. Here are a few:

Apples & Cranberries
Dried Fruit and Nuts Marinated in Orange Juice
Wild Rice & Cornbread
Sausage & Chestnuts
Oyster Stuffing

Many pros recommend always cooking stuffing outside the bird to prevent salmonella poisoning. In this case, you can still put an aromatic inside the bird to enhance the flavor, such as a satchel of herbs, a combination of fruit, or a Mirepoix. If you cook the stuffing in the bird, make absolute certain that you check the internal temperature to ensure it has cooked completely.

Whatever method you choose, preparing stuffing the day before Thanksgiving is a great way to save time on the big day. Just remember to keep the wet (vegetables, fruit, broth, etc) and dry ingredients separate until it’s time to cook them.

Roast a Moist Turkey

Sure you can deep fry or grill, but for most Americans, roasting is the way to enjoy this Thanksgiving staple. Use a roasting pan with low sides and add a cup of water to the bottom to help with clean-up after the meal. Roast at a minimum of 325° F until the internal temperature registers 165° F on a food thermometer. Be sure to check the meat’s temperature both at the thickest part of the breast and on the inner thigh and wing to ensure that the whole bird is thoroughly cooked. If you’ve stuffed the turkey, make sure that the center of the stuffing has also reached 165°F.

Carving Your Bird

Letting the turkey sit for 20 minutes after removing it from the oven allows the juices to set and makes the carver’s job much easier. While it’s intimidating to slice into such a masterpiece, the best way to learn to carve a turkey is to practice! Using a sharp, straight knife helps you with this delicate task.

Experts also recommend removing the drumstick and wing before cutting into the highly coveted breast meat. Once you do, cut a vertical line along the center of the breast–there should be a cartilage ridge down the center. Next, cut a horizontal line along the breast bone, starting from the outside and moving toward your vertical cut. Do this for both sides. Then, slice the breast meat at a slight slant from the outside of the breast to the center. Layer meat on a slightly warm platter, and serve soon to prevent the meat from drying out

The Most Important Thanksgiving Lesson

Whether you opt for an elaborate feast or a casual dinner, your Thanksgiving meal will be special because you share it with loved ones. Give yourself time, relax, and enjoy your time in the kitchen. Whether you’re a pro trying new things or a first-time cook planning your first feast, savor the process and take pride in your hard work.
