Throughout my many years playing this game, I have come across a bunch of websites that specialize in fantasy sports. I saved them all and they are included in the

FANFOOD Fantasy Baseball Tools

and the

FANFOOD Fantasy Football Tools

 

Each week a different website, twitter feed or mobile application will be highlighted and reviewed for you before you “HIT the LINKS”.

 

This week I ask you to check out RotoViz, along with a great recipe for BBQ Lasagna.

While they have some good content, it’s nothing that you can’t find anywhere on the many sites listed in the FANFOOD Fantasy Football Tools, and better yet it’s free.

BBQ Lasagna

 

 

INGREDIENTS

 

1/2 (8 oz.) package lasagna noodles
1 – 16 oz. container cottage cheese
2 c. pork shoulder, cooked and chopped
1 egg, beaten
1 – 28 oz. your favorite BBQ Sauce
1/2 tsp. salt
1/4 tsp. black pepper
1/4 c. chopped parsley + 2 T. for garnish
1 – 16 oz. package Mozzarella cheese, shredded
1 – 16 oz. package Cheddar cheese, shredded

 

PREPARATION

Preheat oven to 350 degrees.
Bring a large pot of lightly salted water to a boil.
Cook the lasagna noodles in the boiling water until cooked through, but still firm to the bite (approximately 12 minutes). Drain.

Add the pork to the BBQ sauce and bring to a simmer over medium heat, keeping warm at a slow simmer.
Toss the shredded cheeses together in a bowl.
Beat the cottage cheese, egg, 1/4 c. parsley, salt and pepper together in separate bowl until smooth.

Coat a large, deep baking dish lightly with cooking spray.
Spread a layer of the BBQ sauce/pork mixture into bottom of pan.
Lay enough lasagna noodles over the sauce/pork to cover bottom of dish.
Spread an even layer of the sauce/pork over the noodles; top with a layer of the cottage cheese mixture and then the shredded cheese mixture.
Repeat layering.

Finish the assembly by topping with a layer of the cottage cheese mixture, a thin layer of the sauce/pork and a light sprinkling of the shredded cheeses.
Reserve a small portion of the shredded cheese for later.

Bake in preheated oven for 40 minutes.

Top lasagna with the reserved cheeses and return to oven until the cheese is bubbly (approximately 5 minutes).
Remove from oven and allow to rest for 15 min. before serving.

Garnish with chopped parsley.
